Char-grilled quail with a butter and thyme sauce


Serves 2

  • 2 whole quail
  • 1 bundle of Thyme
  • 50 grams butter
  • Sea salt flakes
  • Olive oil


Step one

Butterfly the quails by cutting through the back bone and then push down on the quail to flatten it out.

Step two

Melt butter and then add the thyme leaves with salt to taste. Stir ingredients together and then spoon over the quail. Let marinate for 30 minute.

Step three

On a hot BBQ grill place the quail bone side down. After 5 minutes reduce the heat to low and turn the quail. Cook for another 5 minute then turn again to cook for another 5 minutes. Take off once cooked through and plate as desired. The quail can either be cut up or served whole.
