Pan Fried Salmon with Crispy Skin and Dill Aioli

Pan Fried Salmon Ingredients
- 4 Fresh Salmon Fillets form your favourite fish monger
- Olive oil
- Sea salt
- Fresh dill
Place salmon on a plate. Drizzle with oil on both sides. Rub salt into skin.
Heat a large, non-stick frying pan over medium-high heat. No need to add any oil to the pan. Add salmon, skin side down. Cook for 4 to 5 minutes or until skin is crisp. Turn. Cook, covered for 4 to 5 minutes for medium or until cooked to your liking.
Finely chop the dill. We used a store made aioli which is fine. Mix in the dill and aioli and then serve with a lemon wedge.
