Pan fried salmon with crispy skin and dill aioli

Ingredients

  • 4 Fresh Salmon Fillets form your favourite fish monger
  • Olive oil
  • Sea salt
  • Fresh dill
  • Aioli

Method

Step 1

Place salmon on a plate. Drizzle with oil on both sides. Rub salt into skin.

Step 2

Heat a large, non-stick frying pan over medium-high heat. No need to add any oil to the pan. Add salmon, skin side down. Cook for 4 to 5 minutes or until skin is crisp. Turn. Cook, covered for 4 to 5 minutes for medium or until cooked to your liking.

Step 3

Finely chop the dill. We used a store made aioli which is fine. Mix in the dill and aioli and then serve with a lemon wedge.
