Snapper ceviche

Ingredients

  • 500 grams of fresh white fish – we used snapper but gurnard or king fish is great
  • 4 lemons
  • Lug of olive oil
  • 1 red chilli
  • 1 green chilli
  • 1 bunch of coriander
  • Corn chips

Method

Step One

Dice the fresh fish into small parts so they will fit onto a corn chip. Put in bowl and squeeze the juice from 4 lemons into the bowl. No pips. Stir to make sure all fish covered. then let it sit for about 5 minutes.

Step Two

Dice chillies as small as you can and cut up the coriander. Once 8 minutes up add the chillies to the mix and stir in well.

Step three

Use a table spoon to put the mix onto a corn chip and then garnish with the chopped coriander.
