Thai seafood medley

Ingredients

  • 3 tablespoons of light olive oil
  • 1kg seafood medley from your local seafood merchant
  • 1 tablespoon of light soy sauce
  • 1 tablespoon of mirin
  • 4 x garlic cloves
  • Fresh chilli to taste
  • White wine 150ml
  • Salt to taste
  • Chopped basil

Method

Step 1

Throw the oil into a frying pan on low to med heat

Step 2

Throw crushed garlic into the pan but do not let burn

Step 3

Throw seafood medley into the pan stirring regularly

Step 4

Throw the soy, chopped chilli, mirin and white wine in the pan and continue stirring regularly

Step 5

Throw in a touch of water if the sauce reduces too much

Step 6

Add salt to taste and/or extra mirin if necessary

Step 7

Cook for about 10 minutes or when cooked through, turn off the heat throw in half of the chopped basil and stir in for a further minute or 2

Step 8

Remove from stove, serve and garnish with the remaining chopped basil
