Prosecco Superiore DOCG comes in two forms: Prosecco Conegliano Valdobbiadene Superiore DOCG, which can only be made in the Treviso province of Veneto on the hills between the towns of Conegliano and Valdobbiadene (north of Treviso), and the nearby smaller Asolo Prosecco Superiore DOCG, across the River Piave and produced near the town of Asolo. This vineyard is right in the heart of Prosecco country and these guys know how to make a stunning wine.
This Brut is the most popular of all Prosecco and although it has the least amount of sugar added it is the grapes’ fruity flavours of green apples and pears that give this wine its subtle sweetness. Pouring this wine, the fine but strong bead is clear to see. The yellowy straw colour reminds you of the countryside and the fruit driven nose is like walking through a fruit orchard. As an aperitif or an all-day table wine, Prosecco is a fun drink to be had with family and friends. We food matched this with pan fried scallops in a butter and white wine sauce (click for recipe). Sensational!
Serve this cold. We put the bottle in the freezer for about 10 minutes before serving. Don’t forget that Prosecco is a great wine to mix and make some super summer cocktails like a Bellini, Aperol Spritz (a Popsy and JJ favourite when we were in Verona) or a Spagliato.
