Domaine Fourrey is going through their fourth generation from father to son. Since 1992, Jean-luc has been in charge of the wine-making after he finished his studies in Lycéee de Beaune, where he obtained a degree in winemaking.
They have 15 ha of Chablis spread over the village of Milly and Fleys. It is located on the north and northeast facing slopes. Chablis is one of the all-time great white wines on the planet! It produces this amazing ‘minerality’ that simply cannot be reproduced anywhere else, as hard as the rest of the world tries to do so. Minerality is a hard thing to describe. If you can imagine a glass of purified filtered tap water versus the mineral water from natural springs …that’s what we’re talking about …that slightly salty mineral flavour. Meld that with stone fruits, floral notes and that incredible texture you have the magic of Chablis! If you haven’t yet discovered the pleasures of a proper French Chablis, this is a perfect place to start. Chablis has a fresh and lively nose with a beautiful structure, a frank attack and a good persistence.
This is our second vintage of this pristine chardonnay from Domaine Fourrey. Marie-Jo flew out a sample of the 2020 Chablis during covid and it did not disappoint. Holeee Mack it was excellent! Again, malo treatment and time on lees gives this wine fabulous texture. Their obsessively tended vineyards are tucked away in the heart of Chablis, the northern most wine district within the Burgundy wine region. We threw this one into a Burgundy glass for our tasting as it seemed to give off its mesmerising perfume a bit more freely in a more bulbous vessel. And it kept getting better and better in the glass. Crazy for this price!
