Chinese five spice roast chook

Ingredients

  • 1.5kg chicken
  • Lemon x 1
  • Five spice mix
  • Soy sauce
  • Raw sugar
  • Chilli flakes
  • Light olive oil
  • Sea salt flakes

Method

Step 1

Slice the lemon into halves and score each half

Step 2

Put the lemon halves inside the chicken carcass, flesh side up. Then seal the chicken with a toothpick. This will allow the chicken breast to remain moist while the legs cook through

Step 3

Pour soy sauce onto the chicken carcass thoroughly so each part is coated

Step 4

Carefully using a teaspoon tap the five spice mix onto each part of the chicken until it is fully coated. Do the same with the raw sugar and salt flakes

Step 5

Sprinkle hot chilli flakes onto the chicken. Be reasonably generous as once the roast has finished cooking, the impact of the chilli will be diminished

Step 6

Cook in oven for 50 mins on 180 deg C

Step 7

Serve alongside Paris mash for a death row experience!
