Pan Fried Duck Ingredients
- Love-a-duck breast fillet
- Lug of olive oil
- Plum sauce – can either make from scratch or we used jar of plum sauce just easier
- Knob of butter
Method
Step One
Heat a heavy based fry pan with the olive oil on medium heat. Season the duck with plenty of salt. Add duck breasts skin down until they look crispy but not burnt. Then turn pan down to low and turn the duck.
Step Two
Heat up a small pan and add plum sauce. Heat slowly and add butter and mix in.
Step Three
Check duck. Medium is about perfect or cook to taste. This should take about 15 minutes. Turn to check not burning. When cooked to your taste take off heat and rest under foil for 5 minutes. Take the warming plum sauce and pour into the pan. Stir until the duck fat has worked its way into the sauce.
Step Four
Plate the duck either sliced or whole and then drizzle the sauce over making sure the crispy side is facing up. Don’t be shy with the sauce. Pour the balance on the side of the plate.
