Golden Snapper Ingredients
- One whole snapper – get you fish monger to scale and gut.
- 4 Lemons
- Fresh Fennel
- 4 cloves garlic
- 2 red chillies
- 2 green chillies
- Olive oil
- Butter
- Parsley
Method
Step one
Make 3 to 4 incisions from top fin to the bottom fin. Juice 3 of the lemons add to a small bowl with the diced chillies, garlic and half of the parsley. With this mix spoon it into incisions and over the fish. With the left over mix spoon it into the gut cavity. With the sliced fennel and remaining lemons that have been sliced, place in to the cavity.
Step two
Get enough foil to wrap the whole fish in. Grease the foil with the butter and olive oil. Place the whole fish in foil and wrap not too tightly. Place in a preheat oven at 180 for approximately 20 mins depending on the size of the fish. You could cook a weber style BBQ but do make sure that the fish does not sit directly on the grill.
Step three
Once fish has been cooked through place on a serving dish and squeeze lemon juice and add salt to taste.
