Domaine Fourrey Chablis 2018
Chablis is one of the all-time great white wine treats on the planet! It produces this amazing ‘minerality’ that simply cannot be reproduced anywhere else, as hard as the rest of the world tries to do so. Minerality is a hard thing to describe. If you can imagine a glass of purified filtered tap water versus the mineral water from natural springs …that’s what we’re talking about …that slightly salty mineral flavour. Meld that with stone fruits, floral notes and that incredible texture you have the magic of Chablis! If you haven’t yet discovered the pleasures of a proper French Chablis, this is a perfect place to start.
We loved this wine from the second we took our first sniff. Chablis is unoaked, produced from 100% Chardonnay grapes and the fruit for this wine was grown on a small patch spread across the villages of Milly and Fleys. The total estate is just 20 hectares and has been owned and run by the Fourrey family for 4 generations. Their obsessively tended vineyards are tucked away in the heart of Chablis, the northern most wine district within the Burgundy wine region. We threw this one into a Burgundy glass for our tasting as it seemed to give off its mesmerising perfume a bit more freely in a more bulbous vessel. And it kept getting better and better in the glass. Crazy for this price!
We matched this with char grilled octopus (click for recipe) during our tasting, and it was absolutely perfect!
